In this week’s Women in Business spotlight, presented by America First Credit Union (AFCU), we celebrate Katie and Taylor, the inspiring co-owners of Lucky Ones Coffee — a Utah-based café that’s redefining what inclusion and community empowerment look like.

Since opening their first shop inside the Park City Library in 2018, Katie and Taylor have created more than just a coffeehouse — they’ve built a movement. Their mission is simple yet profound: to provide meaningful employment opportunities for individuals with intellectual and developmental disabilities, while fostering a space where everyone is welcomed and valued.

Brewing Inclusion, One Cup at a Time

At Lucky Ones Coffee, every shift, every latte, and every conversation carries a sense of purpose. Team members are given training, leadership roles, and confidence — empowering them to contribute in ways that highlight their abilities, not their limitations.

Through this model, Katie and Taylor have turned their café into a hub for connection and kindness, helping break down barriers around disability employment in Utah and beyond.

Expanding the Mission

In March 2025, the duo expanded their reach by opening a second Lucky Ones Coffee location inside the Marmalade Branch Library in Salt Lake City. The new shop has quickly become a community favorite, blending the same warmth and purpose that made their Park City café so beloved.

Among their team are two athletes from the Utah Royals FC Unified Team, symbolizing how inclusion and teamwork transcend sports and business alike.

A Legacy of Empowerment

Katie and Taylor’s leadership is rooted in compassion and action. Their success is not measured in sales alone but in the opportunities they’ve created — for employees, customers, and the broader community.

By redefining what a coffee business can be, they’ve shown that inclusion is not just an ideal — it’s a strategy for growth, happiness, and long-term impact.

Celebrating Utah’s “Lucky Ones”

AFCU and the Utah Royals FC are proud to honor Katie and Taylor for their dedication to building a more inclusive Utah. Their story reminds us that when people lead with empathy, everyone wins.

Katie and Taylor — thank you for proving that success tastes even better when it’s shared. You truly are the lucky ones — for all of us who get to experience your vision and your coffee.
